Norwegian gingerbread recipe A christmas blogg :)

Hi how are you? I am ashamed that I haven't blogged in forever but life is so busy at the moment!!


I wanted to share this amazing recipe!
And it is simply the best ginger bread cookies I have ever tasted! And I have tasted MANY MANY different ginger bread recipes!

250 gram sugar
2 dl light syrup (i used agave and coconut but golden or maple is fine)
1 tbs cinnamon
½ tbs ground ginger
¼ tbs cloves
250 gram unsalted butter
1 tbs bicarb
2 egg
650-800 gram plain flour
Put sugar and syrup in a small pot and bring to boil.
Then add the spices.
Enjoy the smell!
Add the bicarb and whisk quickly.
It will now fluff up and get very light in the colour.
Put the 250g of butter in a big bowl, and put the sugar/syrup mixture on top and stir till the butter is melted. This takes a while, lots of stirring!
Mix the two eggs together. Then add the eggs to the syrup mixture.
Now add the flour, little by little, and knead the dough 
-then into the fridge over night.
Bake in the middle of your oven, no fan on, at around 200-225 degrees Celsius for about 7-10 min. Depending i your oven. Pay close attention.
Decorate with icing sugar mixed with eggwhites! I used two egg whites and mixed inn icing sugar till it was very heavy to move the fork around anymore. And m&m's of course :) 
Do not cover the cookies! You want the icing mixture to set :)
